Domaine Didier Pabiot

Many in the wine world expect that Jonathan Didier Pabiot will gain the status of that other beloved Didier who was so influential on the wines of Pouilly-Fuissé. 

A fifth generation vigneron, Jonathan started out with two hectares of prime parcels from his grandfather in 2000.  The vineyards contain a microcosm of the soils of Pouilly-Fumé: Kimmeridgian, chalk and silex.   He immediately converted to organic farming methods in the vineyards and eventually gained certification.  His methods in the winery are direct and simple.  The grapes are picked and sorted by hand and go through a slow fermentation and are left to rest on the lees.  He has three cuvees, including the Prédilection and the Aubain which will be available in minute quantities in the next vintage.  But even his basic Pouilly-Fumé has an epic expression of the both the Sauvingnon Blanc grape and the terroir of the vineyard.
